Polyphenols are powerful natural antioxidants found in olive oil that provide numerous health benefits, including anti-inflammatory properties, cardiovascular support, and cellular protection. Free radicals cause approximately 70% of serious killer diseases including cancer, heart disease, and dementia. Olive polyphenols are proven to be some of the most effective at neutralising free radicals, making them essential for long-term health.

How is your olive oil different from others?
Our estate-grown olive oils from the Adriatic coast of Croatia contain the highest polyphenol levels available. We hand-harvest our olives at optimal ripeness and cold-press them within hours to preserve maximum nutritional value. Unlike mass-produced oils, every bottle is traceable to our specific groves and harvest date, ensuring premium quality and authenticity.

How do you achieve such remarkably high polyphenol levels?
Our high polyphenol levels come from two critical factors: early harvest timing and immediate processing. We have our own mill on-site, allowing us to process all our olives within 2 hours of harvesting—preserving maximum polyphenol content.
Polyphenols are highest as the olive is developing, serving as the fruit's natural resistance to pests and disease. As olives mature and get closer to dropping from the tree, they become fatter and juicier, but polyphenol levels drop significantly as the fruit no longer needs this natural protection. We harvest from September to early October, when polyphenols are at their peak, ensuring remarkably high levels in every bottle.
What is the appropriate daily dose of polyphenols?
The European Food Safety Authority (EFSA) recommends consuming at least 250mg of polyphenols daily, which typically equates to about 20-30ml (1-2 tablespoons) of high-polyphenol olive oil. Studies suggest that consuming 2-3 tablespoons daily provides optimal cardiovascular and anti-inflammatory benefits.

Our lighter oils, such as the 600, are ideal for delicate dishes like salads and fish, allowing subtle flavours to shine. Those who prefer a more robust, intense flavour can choose our stronger oils, which pair beautifully with red meats and hearty dishes. Our 1500 is primarily used as a concentrated health shot, delivering maximum polyphenol benefits in a small serving.
How should I store olive oil?
Store your olive oil in a cool, dark place away from heat and light. Keep the bottle tightly sealed when not in use. Properly stored, our high-polyphenol olive oil maintains its quality and health benefits for 18-24 months from the harvest date. Avoid storing near the stove or in direct sunlight.
What's the best way to use high-polyphenol olive oil?
High-polyphenol olive oil is perfect for both cooking and finishing. Use it for sautéing, roasting, and medium-heat cooking to benefit from its antioxidants. It's also exceptional as a finishing oil—drizzle over salads, vegetables, grilled fish, or bread to enjoy its robust flavor and maximum health benefits. Our olives are grown and hand-harvested on our estate groves along the Adriatic coast of Croatia.
