How We Preserve Maximum Polyphenol Power: From Grove to Bottle

At Dalmatia Oil, every step of our process is designed to capture and preserve the highest possible polyphenol levels. We hand-harvest our olives in September to early October when they're still green and bursting with nature's most powerful antioxidants—long before most producers even begin their harvest.

This early timing is critical because polyphenol levels peak when the olive is still developing its natural defences against pests and disease. Our estate mill, located directly on our grove, allows us to process olives within 2 hours of picking, preventing any oxidation or polyphenol degradation that occurs during transport.

Once pressed, we store our oil under argon gas—an inert atmosphere that shields the oil from oxygen exposure and preserves those precious polyphenols at their peak potency. While these methods are more labour-intensive and costly than industrial production, they're non-negotiable for us.

The result is olive oil with polyphenol levels ranging from 600 to 1500 mg/kg—far exceeding the typical 100-250 mg/kg found in supermarket brands.
