Every bottle of Dalmatia Oil is the result of decisions made at each stage of production — decisions that most olive oil brands never tell you about. Here is exactly what happens, from grove to bottle.
Stage 1: The Mill
It starts here. Our mill on the Dalmatian coast is where centuries of tradition meet modern precision. The proximity of mill to grove is not incidental — it is the foundation of quality. The shorter the time between harvest and pressing, the higher the polyphenol retention. Every operational decision at the mill is made with that principle in mind.

Stage 2: Hand Harvesting at Peak Phenolic Ripeness
Polyphenol content in olives peaks before full ripeness — when the fruit is still green to semi-ripe and the phenolic compounds are at their most concentrated. This is the window we harvest in, and it is narrow.
We hand-pick every olive. Not because it is easier — it is significantly more labour-intensive than mechanical harvesting — but because it is the only method that avoids bruising the fruit. Bruised olives begin oxidising immediately, degrading polyphenols before they ever reach the press.

The harvest window, the picking method, and the speed of transfer to the mill are the three variables that most determine the polyphenol content of the finished oil. We control all three.
Stage 3: Cold Pressing Within 2 Hours
From grove to press in under two hours. This is not a marketing claim — it is a logistical commitment that shapes every aspect of how we operate.
Heat is the enemy of polyphenols. Our extraction process runs at below 27°C — true cold extraction — which preserves the full spectrum of bioactive compounds that would otherwise be degraded by heat. The result is an oil that retains the oleocanthal, oleacein, and hydroxytyrosol that make high-phenolic EVOO clinically meaningful.

The oil that flows from the press at this stage is alive with polyphenols. What happens next determines whether they stay that way.
Stage 4: Independent Lab Testing — University of Split
Every batch is sent for independent HPLC analysis to Prof. Dr. Tea Bilišić at the University of Split Faculty of Chemistry and Technology — one of the leading olive oil research institutions in the Mediterranean region.
HPLC (High-Performance Liquid Chromatography) is the gold standard method for polyphenol quantification. It identifies and measures individual compounds — not just total phenols — giving a precise picture of the oil’s bioactive profile.

Stage 5: Bottling Under Argon Gas
Oxygen is the final threat to polyphenol integrity. Once pressed and tested, the oil is bottled under Argon gas — an inert gas that displaces oxygen in the bottle before sealing, preventing oxidation from the moment of bottling. Combined with dark glass and cool storage, the oil that arrives with you retains the same polyphenol profile certified at the University of Split.
